Weekly Menu

This week is fairly low key in terms of menu planning because Joel has a meeting on Tuesday night and will be away for dinner, so the kids and I may eat out. Then on Friday we're going camping and will be sharing some meals with friends. If you have any good ideas for camping foods, I'd love to know what they are!

Monday--Leftovers
Tuesday--Eating Out
Wednesday--Crockpot Stroganoff
Thursday--BBQ Chicken Pizza
Friday-Sunday--Hamburgers, Hot Dogs, Snacks, etc.

  3. i just came across your blog, from reading your review on Lucille O'Neal's book. I reviewed it as well, and had some of the same thoughts as you have in her writing..
    Anyway, i read your question about if anyone has any good camping foods, and though it's not probably what you are still looking for, I have one that we use alot of the campouts we have done over the years..
    Simple, tasty, and fun for the kids to help with.
    Campfire stew... Take two pieces of tin foil, and lay together , making sure it would fit whatever portions you have per person, when folded up into a packet.. Then , I just take bite sized pieces of stew meat, and whatever veggies your family likes and place on the double pieces of foil .. (Cut veggies up in bite sized pieces as well). sprinkle a package of dry onion soup mix , porportioned to amount of meat/veggies so its not to strong ) add a tsp or so of water, fold up the two ends of the foil together, making sure to roll tightly.. throw on campfire and cook .. I can't remember how long it took, so you would have to guage the sizes of your foil bundles to make sure the ingredients were cooked all the way.. Its simple, its good, and reminds me of old fashioned cooking in the pioneer days, lol.. might be a good object lesson for kids ..
